Understanding Wholesale Beef Pricing

Understanding Wholesale Beef Pricing

There are some key points to consider when buying wholesale beef. In this article, we use a 1/2 cow purchase as an example.

This article will cover:

  • Information on the typical weight of a half cow both before and after butchering.
  • Explanation of pricing per pound for unbutchered versus butchered meat.
  • Details about the actual costs included in the price per pound, such as butchering, packaging, and delivery.
  • Insight into the upbringing and diet of the cattle, emphasizing their grass-fed and grain-finished nature.
  • Information on the cattle breed used, specifically Speckle Park, and its meat quality attributes.
  • Details about the processing standards, mentioning the use of provincially-inspected facilities.
  • Information on the direct delivery model and its contribution to a farm-to-table experience.
  • Economic context regarding the increase in the cost of cows over the past two years.
  • The purpose of the article to clarify pricing structure and ensure understanding of product quality.

  • Firstly, a half cow typically weighs about 340 pounds. If you choose to purchase a half cow unbutchered, you'd receive the lowest price-per-pound, but you will need to handle the butchering yourself.

The butchered weight of our half cows is 200 pounds. Understanding this weight difference is crucial for calculating costs accurately.

While we could advertise a price of $8.24 per pound based on the initial hanging weight of 340 pounds, this would be misleading since most customers do not butcher their own meat. Instead, our price of $14 per pound reflects the cost of the beef once it is butchered, wrapped, labeled, frozen, and delivered to your door.

Additionally, it's important to consider the cattle's upbringing and diet. We are a start-to-finish operation, calving and raising the these cattle ourselves. They are grass-fed, and grain-finished during the last 4-6 months of their lives.

Furthermore, not all cows are the same. Our cattle are of the Speckle Park breed, renowned for producing exceptionally juicy, flavorful, and tender meat.

Lastly, our beef is processed in provincially-inspected facilities. Hallie raises most of the cattle himself and typically delivers directly to your door, ensuring a genuine farm-to-table experience.

Please note, like many things, the cost of cows has significantly increased compared to two years ago.

We hope this breakdown helps you understand our pricing and the quality of our product.
